Pasta Roni

Hmmm? Been a while since I've posted a dinner. We have been eating, really! Just haven't gotten on here.

Last night we had Pasta Roni Angel Hair Pasta with Herbs. The girls loved it! It's rare when we have a time when they don't complain about what I make. They're so picky. With it we had corn on the cob from our garden. YUMMY! Well, Brandon and I had it. The girls don't like the corn on the cob. *shock* See what I mean about picky? And some frozen store peas that I steamed with the corn. The girls like the peas. :) Rachel said that she "liked the peas better than the pasta. Peas are my favorite vegetable." Peas are so yummy, so no wonder! The corn baffles me though. Rachel says she likes the store corn on the cob better than the garden corn on the cob. . . . . Humph!

Why We Are Vegetarian - Part Vegan

Since about the age of 8, I was plagued with constant depression that affected my life as a child and teen in many ways, but mostly socially. A friend in college helped me realize I had bipolar disorder all that time. I tried meds for a few months, but they just screwed me up more, so I dumped them. In 1998 or 99, I learned that some people cut milk out of their diet and would be relieved of their depression, along with other diseases, but the depression is what concerned me. I loved milk, but decided to give it a try and see if it would help me too. It did! I'd still get sad at times, but it wasn't nearly as often as before! Much more bearable to deal with at least. I was to figure out later why I was still getting the depression, but just not as often, or severe.

The couple years leading up to 2005, I'd notice that I'd get depressed without fail within hours to half a day after eating meat. I'd only eat meat 1-2 times a week, if that, sometimes once every two weeks, so it was very easy to notice the correlation there. Then, my mom told me about the Hallelujah Acres diet, and it made perfect sense to me since I was starting to wonder about that on my own. So, I decided to experiment with no meat in the diet and see what happened, just like I had with the milk years before. June 2005 I became a full fledged vegetarian since the depression was then totally gone as long as I didn't eat the wrong things. I've become a new Elizabeth! I'm the Elizabeth I always felt was buried somewhere wanting to come out, but just had a hard time. I can at least get away with a little cheese and ice cream, but when I overdose on those, I do get depressed. That's why I'm part vegan. . .still eat cheese and ice cream, along with some other dairy products like butter. I've also given up eggs. . .they do me in too. I'd like to someday be able to say I'm a full vegan, but just can't do it yet! Someday. . .baby steps.

So, why my kids too? My diet isn't just good for helping depression, it helps pretty much any other disease out there too even though many people refuse to believe it. I want my children to be as healthy as possible. Plus, Rachel naturally didn't like the taste of milk and meat when she started eating real food, so I figured, "Good for you, kid!" Michaela likes meat, doesn't like milk, but I still don't feed her any meat for the sake of her health.
